Potentially a hot take but I think Dipper might be the most emotionally intelligent out of both sets of Pines twins, but in a very specific way.
Ford really isn't overly concerned about people's feelings; it's just not something he really tends to think about or prioritize. And when he does think about it, he tends to only view people's emotions based on how he would feel about the situation.
Stan is skilled in knowing how to handle people and quickly grasping their intentions. He's a con man that understands crowd mentality and how to play it. Overall, he just knows what people tend to want to hear and gives it to them, so quick with a lie. And because of this, he's wary of when people tell him what he wants to hear. He's a con man that recognizes a con, and knows a person's intentions and desires are important so he looks for them. But he doesn't really know how to interact and connect with people genuinely and openly. He wants to have genuine connections, specifically with his family, but for all of his life he's either delt with people that didn't care for him and made it obvious (his father), people who didn't seem as invested in having a relationship with one another as he did (Ford), or people he's had to constantly lie to and thrown on a persona to survive (his years being homeless and being Mr. Mystery). Because of this, genuine feelings and connections are difficult for him to navigate and articulate, or even really understand.
Mabel, out of all of them, definitely cares the most about other people's feelings. She spends time thinking about others feelings long after the fact, considers them carefully, with the end goal of everyone being happy. But she can get so caught up in what she thought would make everyone happy, that it can be difficult for her to take a step back and look at if what she's trying to do is really the right thing for people.
But Dipper is the one that tends to just, like, quickly grasp the heart of an emotional situation and just points it out. And, unlike Mabel, he doesn't really prioritizes everyone being happy, so when he points it out he tends to be very blunt about it. He also, surprisingly, is the first to take a step back and look at a situation, and what the right thing to do is, even if it's not what he wants, something Mabel and Ford have difficulties with. He also doesn't get upset if he's the one in the wrong, able to admit it easily once he realizes it and immediately has a desire to amend what he did wrong. However, he too has a blind spot, as does everyone. This blind spot being his paranoia; if he doesn't fully know about the situation, the conclusion he'll end up at will always be the worst one (stan portal situation). Dipper very rarely takes previous loyalties into consideration when trying to figure out what's going on; if it's someone he knows and loves he'll try to find out proof that go against his suspicions, but if he doesn't immediately find any he'll jump to an answer that speaks to his paranoia (opposite from Mabel, who is predisposed to firmly see the best in others even if there is evidence proving otherwise).

My brother (same one as last time) also pointed out that the wording of the Never Mind All That act implied people outside of Gravity Falls knew something was going on. Also, the news broadcasting stuff. Fanfic authors, we have work to do. We’ve been missing a lovely source of fanfic inspiration

gabriel- keeps the lies going bc he feels like he is giving people someone to look up to and feel protected by, something he didn’t have when he needed it the most during the worst time of his life.
ellegaard- wants to be respected for her own merits and “be the best” but feels that relying on help invalidates what she’s done and that she needs to not be “weak” and do it herself this big grandiose thing, and make up for the lie with said big grandiose thing.
magnus- wants to “free” more than anything and he feels the most trapped in this life he’s in now

and here is the Pines family crest! i chose to base it off the portal because i couldn't really think of anything else that really symbolized the whole family - pine tree, shooting star, and all the other usual things would be too much to just one of them. i considered making it star shaped or bill cipher based until i had this idea

some misc headcanons
pacifica started working at greasy's because her parents made her. she was spending too much time talking to dipper and mabel and her parents were like "if you're going to fraternize with common rabble, you're going to work like one". they don't really care about collecting the paycheck she earns. they just did this to spite her for having friends and to punish her for it (joke's on them because she meets even more friends at the diner while working there)
after paz leaves home a couple months after turning 18, she goes and lives with susan for a while until she gets an apartment with dipper and mabel in town (theyre either going to a local college or getting their degrees online cause they wanna be in gravity falls as soon as humanly possible)
the Career headcanon i have for the twins + paz is that they start a paranormal pest control & problem resolution service. kind of like the ghostbusters, but not always ghosts and not always busting things. sometimes they just need to use diplomacy. either way, i feel like it's the perfect gig for them. it's a service that is needed in gravity falls, it's something the twins are well-experienced in, and it's something they enjoy immensely, too. win win win. dipper and mabel are primarily the ones doing the field work while pacifica is their bookkeeper/receptionist/general office person, putting her business degree to good use, but sometimes she'll join them on a mission when she's up for adventure

light mabel analysis just from the first episode of gravity falls
when dipper has just read "trust no one" she jumps out and spooks him to ask what he's looking at and when he hesitates there's a tone of surprised amusement in her voice when she asks "what you're actually not gonna show me?" which shows that they are really close and that he's likely never done that before
when she's hanging out with norman she says "daisies? you scoundrel!" and in flower language daisies represent innocence, purity, and cheerfulness. they are also commonly thrown at weddings
when she's in the woods with norman she's obviously disappointed that he's actually a bunch of gnomes but you can also tell she's deeply uncomfortable, for one because dipper was right and she feels she should have listened to him, and for two she was being taken advantage of! she's a 12 year old girl who got tricked by a bunch of men to marry them!!! and she feels like it's her fault for not listening to dipper (it's not her fault, sure she could have been more careful but that's exactly why they picked her )
when one of the gnomes latches onto dippers face she yells "i'll save you!" and punches the fuck out of the gnome. and when they are confronted at the shack she asks him "trust me dipper, just this once trust me" and uses the leafblower that she had earlier injured herself with by practice kissing to take out the gnomes, who she yells at for lying to her and for messing with her brother.
all of this just in the first episode alone shows who mabel is as a person, which is a funloving girl who cares about her brother immensely and also knows when to fuck shit up!!!!!!!! like damn!!! she's so cool!!!! and also a good precursor to irrational treasure, because had mabel not been silly she wouldn't have known to use the leafblower, as well as starting off they're mystery adventures by being what brought their first supernatural encounter on
