Mediterranean Grilled Chicken Skewers
Ingredients:
* 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
* 1 red onion, cut into 1-inch chunks
* 1 bell pepper, cut into 1-inch chunks
* 1/4 cup olive oil
* 2 tablespoons lemon juice
* 1 teaspoon dried oregano
* 1/2 teaspoon garlic powder
* Salt and pepper to taste
* Wooden skewers
Instructions:
* In a large bowl, combine the chicken, red onion, bell pepper, olive oil, lemon juice, oregano, garlic powder, salt, and pepper. Toss to coat and marinate for at least 30 minutes, or up to overnight.
