i’ve spent the past few weeks in quarantine figuring out pancakes! thought I’d share my preferred method <3
INGREDIENTS:
125g all-purpose/plain flour
2tbsp sugar
2tsp baking powder
250ml milk
2tbsp vegetable oil + extra for frying
1 large egg
your favourite toppings!
INSTRUCTIONS:
Mix the flour, sugar and baking powder together in a bowl
In a separate bowl or jug, whisk together the milk, oil and egg
Slowly add the dry mixture to the liquid, whisking as you go
When your batter is ready, heat your frying pan and grease with oil (stick to a low-medium heat - if your pan is too hot the edges might burn before the batter is fully cooked)
Pour a dollop of batter onto the pan, be careful, it spreads quick!
Fry the pancake until it begins to bubble on the top - you can use your spatula to peek under the batter and see if the side is cooked
Flip the pancake carefully onto the other side and cook until browned again
When your pancake is ready transfer to a plate - covering with foil helps to keep them warm whilst you fry the others
Add your favourite toppings and enjoy!
1 large egg
½ cup light brown sugar, packed
¼ cup sour cream
1 ¼ cups all-purpose flour, plus additional if necessary
1/3 cup canola or vegetable oil
¼ cup granulated sugar
2 teaspoons vanilla extract
½ teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt, or to taste
1 cup mashed ripe bananas 🍌
1 ½ cups fresh cut strawberries 🍓
Preheat oven to 350F. Spray one 9×5-inch loaf pan with floured cooking spray, or grease and flour the pan; set aside.
To a large bowl, add the the first six ingredients, through vanilla, and whisk to combine.
Add 1 ¼ cups flour, baking powder, baking soda, salt, and fold with spatula or stir gently with a spoon until just combined; don’t overmix.
Add the bananas and fold gently to combine.
Add the strawberries tossed in 3 tablespoons flour and fold gently to combine. Batter should be on the thicker side.
Turn batter out into the prepared pan , smoothing the top lightly with a spatula.
Bake for about 55 to 65 minutes (I baked 60 minutes) or until the top is golden, to prevent top and sides from becoming overly browned before center cooks through..
Allow bread to cool in pan for about 15 minutes before turning out on a wire rack to cool completely before slicing and serving.
super important! also stay hydrated! it's important, especially if you have a mental illness, to stay hydrated because sometimes we forget to do some simple things to take care of ourselves, and staying hydrated can be one of them. you are loved 💕💕
- try to enjoy the sun as much as you can!! even if it’s to open your window to let some daylight and fresh air in!
- try to get dressed every morning, even if it’s to change from your pajamas to a hoodie and leggings. believe me, it does make a change
- make a list of activities that usually keep your mind busy
- being close to your pets helps a lot
- try to meditate everyday, it’s super beneficial
- i know it’s hard (specially because our bodies are way less tired) but try to go to sleep at the same hour everyday and keep a concise sleeping schedule
- don’t force yourself to be extra productive just because you are at home, let your mind and your body rest
- try to keep contact with your loved ones and talk to them regulary (keeping a list of people you want to text/call everyday also helps)
- trying sensorial hobbies help a lot during this time, specially if you suffer from dissociation or if you feel out of touch with reality lately. embroidery, playing an instrument, painting, gardening... you name it!
- writing a list every single day of things that happened that day that you are grateful for helps a LOT
- if you are too tired to exercice, yoga helps
- try to be kind to yourself. you deserve as much love as anyone else

What you will need:
1 cup Rice/almond milk
1 tsp vanilla
2 tbsp Maple syrup
½ tsp lavender
¼ tsp cinnamon
A pinch of nutmeg
1 teaspoon butterfly pea flower powder
How to make it
In a small saucepan set over medium-low heat, whisk together milk with maple syrup, butterfly pea powder, lavender and spices until powder is dissolved and milk is warm but not yet simmering.
Whir briefly using a handheld milk frother.
Pour into warm mug and enjoy.
for baking / when you want something sweet, the easiest cookie recipe to remember !!!
- oven on 350 f
- 1 cup of nutella
- 1 cup of flour
- 1 egg
- mix those all
- make into balls and flatten them with the bottom of a glass
- bake for 10 minutes
delicious nutella cookies !!!
it takes about 15-20 minutes total and by the time i was done washing the dishes they were done baking !
i love how telling somebody’s favorite flavor of sucker/lollipop is about who they are as a person. tag your favorite flavor mine is strawberry

Hot Ponyo
To make this warm relaxing drink you need
Half a mug full of a tea of your choosing (I prefer sleepy time tea)
A pinch of cinnamon
A half teaspoon of vanilla extract
Two teaspoons of honey
Halfish mug full of milk
*tip- if you don’t want your Hot Ponyo to get cold quickly, put the milk into the microwave for 30-45 seconds before you add it into your tea*
Hot Ponyo is a very nice soothing drink that is very easy to make. I personally like to have it before bed as a nice drink to have while winding down and getting ready to sleep.

i have never felt as mature as when i finally understood (through therapy) and internalized (through emotional work) that you cannot connect and communicate with some people no matter how kind, compassionate, understanding, articulate, eloquent, or smart you are, and that sometimes a person not listening to you does not reflect on your communication skills or ability to connect or straight up intelligence. in a way, it’s letting go of the belief that you have the power to make people understand you. communication is a two-way street, and needs two willing participants. some people are just walls, and it has been unbelievably helpful for my mental and emotional health to let it slide and know that it does not affect me or my self worth.
