The trick is to change your root mount to use the snapshot subvolume instead

btrfs tip for y'all: use subvolumes. restoring a snapshot of a subvolume is as simple as duplicating the snapshot as readwrite, deleting/moving the old subvolume and renaming the copy to the subvolume's name
