Then it happened again. Again-again-again... I don't know how this will make my writing better. Wrong: It does, I just don't know how or why. (Laurie and me and the book we read, and the writer of that book, are becoming more and more clear. Fiction or not.) Anyway, it happened: At this place, I had a dinner that couldn't make it past 100 DKK / 12 €... Including main course of beef (a lot!!) with salad and 'batatas fritas', bread, half bottle of vinho tinto, desert, coffee, and an (old!) brandy that for sure wasn't small... And the couple that has the place, were simply nice. And yes, I know those unbeliable prices partly are a result of the 'crisis'. BUT! It IS also a cultural thing: Here in Portugal you live your life so much more on café's and restaurants. It's as simple as that. You don't stay in your home; you get OUT! The streets are part of your home. And, besides a lot of other stuff, it makes people less isolated. More a part of the local community. And that can only be a good thing! Period! My partner and I have this problem! It doesn't help that neither of us are good enough cooks to decide something on the spur of the moment that we'll both enjoy, so we have to plan a week's worth of dinners before we get groceries.
One thing that helps us is having a spreadsheet of dinner options. It includes where the recipe is, what type of protein it has, and what cooking method it uses. (We should probably add how long it takes, but we haven't gotten around to that.) This lets us look for slow cooker recipes or a way to use up the package of ground beef in the freezer.
This isn't perfect -- we still spend a lot of time staring at the spreadsheet, trying to find something that we're in the mood for and haven't done two of the last three weeks. However, it helps a lot with the "I suddenly forgot every food I like" problem!
My co-isolation sweetie and I ordered dinner from a local restaurant that does very good Middle Eastern food. It was delicious, and I have enough leftover gyro meat and hummus to have it again later in the week! I may even have enough to scramble some with eggs for a third meal. Yummmm.

Spaghetti Squash Chicken Parm - Parmesan This spaghetti squash chicken Parm recipe is a lightened up version of the classic, using spaghetti squash noodles in place of pasta, and omitting the usual heavy Parmesan topping.
Eggs are the most usable ingredients of all time, if you don’t have anything at home you just have to poach an egg to make you a snake, that’s it. And it is also helpful in weight loss, eye health, reduce the risk of stroke etc. That is why I have got an amazing new recipe that will make your day.
Let’s get started with no further delays...
I. 4 eggs V. kosher salt
II. 1/4 cup chopped chives VI. Freshly ground black pepper
III. 1/4 cup crumbled bacon VII. 1/4 lb. deli ham, chopped (optional)
IV. Black Pepper VIII. 1/2 c. freshly grated Parmesan
Break the eggs and separate them by placing the yolks in 4 separate bowls and the whites in 1 large bowls.
Season the egg whites with salt and pepper. Then using a whisk beat the egg whites until stiff peaks form. Gently fold in Parmesan, beacon or ham and chives. Create 4 mounds of egg whites on the parchment-lined baking sheet and make a deep well in the centre of each.
Preheat the oven 450° and line the large baking sheet with parchment pepper. Bake it until slightly golden, for about 3 minutes.
Then carefully add a yolk to the centre of each cloud and again bake them until the yolks are just set, which will take another 2 to 3 minutes.
Take them out of the oven and season them with some chives and with some grated parmesan. And just enjoy your clouds.
