Raspberry Peach Coffee Cake

Savor the dog days of summer with this fresh, fruity coffee cake.  The sweetness of the peaches and raspberries seems to hold the shortening days at bay, for a time at least.

Ingredients:

1/2 cup non-dairy butter, softened

1 cup granulated sugar

Egg replacer for 2 eggs

2 teaspoons vanilla extract

2 cups Gluten Free all-purpose flour

2 teaspoons baking powder

1/2 teaspoon xanthan gum

1/2 teaspoon salt

2/3 cup soy milk

1 cup fresh or frozen raspberries

1 cup fresh or frozen peach slices

Directions:

1. Preheat oven to 350 degrees.  Grease a 9" round cake pan with nonstick baking spray.

2. In a large mixing bowl, cream together the butter and sugar with an electric mixer until light and fluffy.  Beat in the egg replacer and vanilla.

3. Combine the dry ingredients in a separate bowl.  Add to the butter mixture alternately with soy milk, beginning and ending with flour mixture. Beat at low speed until blended after each addition.

4. Pour into the prepared cake pan.  Evenly spread the peaches and raspberries on top of the cake batter.

5. Bake for 1 hour.  Remove and cool over a wire rack.  Slice and serve, sprinkling with powdered sugar if desired.

ES| Aunque podemos encontrar limones todo el año, una de las épocas de recolección de la fruta es el invierno. El limón aparte de estar buenísimo, combinar genial en las infusiones y contener vitamina C y otros minerales, es un fruto con muchísimas propiedades beneficiosas no solamente consumiéndolo fresco, sino que también es muy apreciado por el aceite esencial que se extrae de su piel.

Exprimido se usa contra la artritis, es depurativo, diurético, antirreumático, antivírico, antibiótico, anticatarral, antigripal y antidiarreico, ya que es astringente y remineralizarne. Además, es antiséptico bucofaríngeo y ayuda a combatir la amigdalitis y la faringitis. El limón también contiene terpenos, que tienen propiedades antitumorales, ayuda con los mareos, las taquicardias y las enfermedades cardiovasculares.

A nivel cutáneo es un gran tónico y también se utiliza contra la celulitis. Funciona de maravilla como limpiador, por lo que es de gran ayuda contra la grasa facial y el acné. Es antiséptico, cicatrizante y coagulante, a parte de un fortalecedor capilar natural.

Su aceite esencial vaporizado tiene propiedades contra la fatiga, la tensión nerviosa, la depresión y la falta de concentración por lo que es un gran aliado en momentos de estudio o trabajo.

Aunque ya sabéis que siempre se tiene que ir con cuidado, ya que no a todo el mundo le van bien los mismos remedios ya que a veces suelen tener contraindicaciones, como por ejemplo la acidez del zumo de limón puede estropear el esmalte de los dientes, o el aceite esencial si se expone al sol puede dejar manchas! 🍋🌱

ES|| Menuda ola de calor que tenemos encima!! Y, lo que más me asusta es que cada año, con el cambio climático y el calentamiento global, esto irá en aumento! El océano se convertirá en un caldo acido, los veranos serán mortales, habrá más tormentas y catástrofes, … En fin, no quiero ni imaginármelo! Si fuera por mí, me encontraríais nadando dentro de este vaso con estas bolitas tan simpáticas, pero, desgraciadamente, tengo que conformarme en ir bebiendo, a lo largo del día, una bebida bastante parecida, aunque con menos frutas y más hierbecillas que me ayuden a sobrellevar las ganas de derretirme en el suelo sin hacer nada todo el día. No sé vosotros, pero yo no llevo muy bien los climas “extremos” y no me gusta, si puedo evitarlo, gastar energía y contaminar, así que no suelo poner el aire acondicionado ni el ventilador, porque por poco que gasten si sumamos el consumo de todos… De momento, tengo un mantra para los momentos más duros “piensa en los osos polares!” Espero que aun estemos a tiempo de cambiar esta situación antes de que vaya a peor.🥝🍋

I don't handle “extreme” climates very well and I don't like, if I can avoid it, wasting energy and polluting, so I don't usually put on the air conditioning or the fan, because no matter how little one of them may consume if every one of us puts its own on… I have a mantra for the hardest moments “think of the polar bears!” I truly hope we still have time to change this situation before it gets way worse. 🥝🍋

Es un remedio natural que ayuda a las defensas, ya que aporta vitamina C, potasio y flavononas, favorece la digestión y además es depurativo y alcalinizante. La receta es fácil, exprimir el jugo de un limón, poner a calentar un vaso de agua hasta que este tibia y, finalmente, añadir el jugo del limón al agua caliente. Si quieres darle un toque más cítrico y potenciar los beneficios del limón, en cambio de solo calentar el agua puedes hervirla con unos trozos de piel del mismo limón, después la dejas enfriar hasta que este tibia y le añades el jugo del limón! Como con todos los remedios no a todo el mundo le van bien las mismas cosas, mi recomendación es escuchar a tu propio cuerpo.
